We, of this southern third world country don’t have such fancy stuff apparently. So I made my own, because it’s so ridiculously easy, just heat olive oil and add the chopped toasted pistachios. Then you can process the whole thing or leave it as it is. I preferred the unprocessed version for this recipe, but it would be good to try a sort of pistachio olive oil butter.
- 1 whole wheat piece of bread (or your favorite kind)
- 1/2 avocado (peeled and cut into slices)
- 2 Tbs pistachio oil
- Squeeze of lemon juice
- Sea salt
- Black pepper
- Toast piece of bread. Top with slices of avocado. Squeeze lemon juice over and add salt and pepper to taste.
- Swirl pistachio oil on top.
