Salt & pepper
Have veg roasted ready to go, I use roasted eggplant, tomatoes, onion and garlic. Oil & butter an 8-inch dish and dust with fine dry breadcrumbs.
ROAST THE VEG
In a bowl lightly mix eggs. Add yogurt, milk and sour cream then season with salt, pepper and herbs. I use thyme, oregano and basil.
FOR THE QUICHE
Add the veg and binding cream to your prepared dish. Bake for 45 minutes. Careful not to overbake.
Serve hot with a side salad. Refrigerate leftovers, covered then reheat in a medium oven before serving.
