Easy Ricotta Cheesecake (no-crust!)
Separate eggs: yolks into ricotta mixture and white in clean mixer bowl.
Add half the sugar and flour to ricotta.
Rest of the sugar is beaten with the egg whites.
You should have creamy, medium peaks.
Add in two parts to the ricotta batter, mixing lightly to incorporate.
Pour into the prepared pan.
And bake as directed.
Make it with orange or lemon zest, they're both amazing!
