HOMEMADE PUMPKIN PUREE

This is a basic and easy recipe to make your own pumpkin puree. There's little hands-on work involved and the result is amazing. Use it just like you would canned pumpkin.

INGREDIENTS

1 PIE PUMPKIN, whole or 1 BUTTERNUT SQUASH, whole

Wash, dry and bake whole pumpkin until easily pierced with a fork or knife.

Cut in half.

The same method goes if you use butternut squash.

Scoop out the seeds with a spoon.

Scoop out the pulp and put in the bowl of a food processor.

Process until very smooth.

It should be creamy.

Use a fine mesh colander over a bowl to drain for several hours.

Use a cloth if too watery or using a large hole colander.

Store, covered, in the refrigerator or freezer.
