JAM TARTS  (or Raspberry Cookie Cups)

Do you see how amazing these cookie cups or jam tarts are?

Soft butter with lemon zest; add powdered sugar and incorporate with spatula.

Add flour and continue to mix.

Then add the sifted cornstarch.

Integrate well by 'scraping' with a spatula. The dough is soft but not sticky.

Scoop directly on regular muffin tins or line with paper cups (easier to remove!)

Fill with raspberry jam.

Top with sliced almonds and bake as directed

Carefully remove from pan; they are crumbly so be gentle.

Alternatively, fill them with your favorite jam or even Nutella!
