LEMON OLIVE OIL CAKE

Add sugar to eggs, beating until thick.

Add the lemon zest

Add olive oil in a thin stream.

A splash of pure vanilla extract (or paste)

Add sifted dry ingredients in 2 parts.

Beat to incorporate well but don't be tempted to beat too much.

Pour into the cake pan.

For the glaze, mix powdered sugar and lemon juice.

Pour over the completely cooled cake.

Let drip down the sides.
