OLD FASHIONED BLACKBERRY COBBLER

INGREDIENTS

Blackberries Lemon Cornstarch Sugar Unsalted butter Flour Salt Baking powder Buttermilk

Mix berries (fresh or frozen) with sugar and citrus zest in a baking dish.

THE FILLING

First make a cornstarch slurry by dissolving it in water. Then pour it over the blackberries.

CORNSTARCH

Combine the dry ingredients (flour, baking powder, salt, and sugar) in a large bowl.

TOPPING

Add the buttermilk and the melted butter (warm, not hot).

WET INGREDIENTS

Sitr lightly with a spoon or spatula just until combined. Don't beat or mix too much.

MIXING

Spoon mounds of the biscuit mixture over the berries, with space between them. 

TOP LAYER

Bake as directed until bubbly and golden brown, making sure the topping is fully baked.

BAKING

Eat plain, at room temperature, or slightly warm with a scoop of ice cream.
