TOMATO FOCACCIA RECIPE
Mix yeast, sugar, half the flour and water. Rest for several minutes.
Add the rest of the flour, salt & olive oil.
Knead for 5-8 minutes (by hand or stand mixer) until a smooth dough forms.
Cover and let rise until doubled (about 1 hour) in a warm, draft-free place.
Punch the dough down and transfer to an oiled baking pan
Stretch to cover the whole pan without forcing it. Allow to rest a few minutes if too elastic. Let rise again.
Dimple the whole surface with your hands. This step is important.
Drizzle with a generous doze of good olive oil.
Sprinkle with some sea salt.
Leave plain or top with tomatoes and herbs if you want.
