Pumpkin Dump Cake

You might also know it as pumpkin pie cake or pumpkin crunch cake. It's a dessert, or a crustless pie more than a cake. Imagine a great pumpkin pie filling meets a crumbly topping made with just 2 ingredients.

INGREDIENTS

Simply put all the ingredients in a large bowl and beat them until smooth.

PUMPKIN MIXTURE

An electric hand-held mixer is what I always use and it takes about a minute, but you can do it by hand with a large whisk. Make sure it's very well combined and smooth.

MIX WELL 

This layer is similar to a crumble but much easier to put together. Pour the cake mix into a mixing bowl and add the melted butter.

TOPPING

Mix it all together. The final mixture will be crumbly and have dry spots. That's fine.

FINAL MIXTURE

Sprinkle the topping over the filling in a 9 x 13 pan.  It will feel as if it's sinking, but it's fine. Make sure you cover the edges.

ADD THE TOPPING

You can add the pecans on top of the cake mix before baking the cake or after about 20 minutes of baking. They will be very dark if you add them from the beginning.

PECANS

Serve at room temperature with a dollop of cream cheese.
