My formula for frozen lemonade concentrate is easy and fresh, with no additives or preservatives. It has only 3 ingredients, and you can choose how sweet or sour you want it. I freeze it in ice cube trays, but you can also keep it in the refrigerator for several days. You can also use it for cocktails and other drinks that call for lemon juice and sugar.
For the syrup, put the sugar in a small saucepan and add the water.
Place over medium heat, stirring a few times, and let it come to a boil. Remove immediately and let cool.
Stir in the fresh juice. Strain it over a fine mesh colander if you want a completely smooth mixture or leave some lemon pulp in if that's your preference.
Stir to mix and pour it into ice cube trays and freeze. If you want to keep it refrigerated instead of frozen, use mason jars or other glass airtight container.
When you want to use it, put 3 frozen cubes in a tall glass, add cold water and stir until they completely dissolve. Taste it and add more frozen lemonade or water to adjust it to your liking.
Notes
You can change the amount of concentrate you make by using a different container as your measure. Use a 2-cup measure or ½ cup to make more or less. Just stick to the formula. Adjust the sweetness or sourness: you'll have to adjust the ratio of ingredients and use more sugar for a sweeter lemonade, or less for a more puckery one.
