No frills, no fuss: just a straightforward, delicious solution to your post-holiday food leftovers. Turkey, cran sauce, cheese and a few other ingredients. And a good bread of course. A sandwich so easy to make, it practically puts itself together.
Toast 4 slices sandwich bread until they are light golden brown.
Spread 4 tablespoons cranberry sauce, divided evenly, on two of the bread slices.
Layer 6 slices white or dark turkey meat on top of the cranberry sauce, dividing evenly between the two slices of bread. Add a slice of Swiss cheese on top of the turkey.
Spread mayonnaise on the other half of bread and top 2 leaves butter lettuce, divided. Top with the second slice of bread and cut the sandwich in half.
Notes
Bread slices: multigrain, seeded, classic whole wheat bread or white sandwich bread work really well. If using sourdough or ciabatta-style breads, look for those with a softer crust.Dry turkey: This can be a problem, especially if using breast meat. Besides the cranberry sauce and mayo, you can drizzle a bit of warm gravy (if there is any leftover) or olive oil. This not only adds moisture but also enhances the flavor.
