EASY ROMESCO SAUCE RECIPE
Easy Romesco Sauce
2 cups approx
Salt & Pepper
Roasted Red Peppers
Fresh Chili or Jalapeño
Cut tomato into quarters and add to baking dish with bread, garlic and red peppers. Drizzle with olive oil, salt & pepper. Roast for approx 30 minutes.
ROAST THE VEG
Add almonds to a bowl and cover the almonds with boiling water.
PEEL THE ALMONDS
Leave for 5-10 minutes until the skins soften and should slip off easy. If not, repeat process.
Add the roasted veg (and juices released) to blender jar with almonds, chili if using, coriander, ground cumin, salt & pepper. Add a little oil and blend.
Romesco sauce is fantastic with fish, chicken, pasta or use as a dip with crackers. I also love it with potato wedges!
