HOW TO MAKE PERFECT FLAKY PIE CRUST

We all need a foolproof (or almost) recipe for pie crust, the flaky kind, the one that can be used during the holiday season, and also for fruit pies. This is a basic recipe that can be made in the food processor or by hand.

Flour Unsalted Butter  Shortening Sugar  Salt  Ice Water

INGREDIENTS

Put flour, salt, sugar, cold butter and shortening in bowl of food processor.

Pulse using on-off until the butter/shortening is the size of peas or beans. They will be uneven.

Add ice water and process in short bursts.

Grab some mixture with your hands. If it's crumbly and floury it needs more water.

When ready, it should come together and hold well without crumbling.

Dump onto a clean surface and start bringing it together but without kneading it.

It will come together, just make sure you don't over work it.

Wrap and refrigerate or freeze according to recipe directions.
