Beat soft butter with lemon zest & sugar.
Add vanilla and lemon juice; incorporate well.
Add egg and whisk to combine.
Sift dry ingredients and incorporate them into mix.
The dough is soft but slightly sticky so refrigerate for a few hours.
Make small balls (walnut sized) with a spoon or cookie scoop.
Coat very well in powdered sugar.
Add to parchment paper lined cookie sheet.
Make sure to leave space between each one.
Bake for 12 to 15 minutes then let cool before eating.
