INGREDIENTS
Unsalted butter
Filling
Crumble
Light brown sugar
Cornstarch
Vanilla extract
Swipe up for a homemade perfect flaky pie crust recipe and blind bake according to instructions. Alternatively, use store bought.
FOR THE CRUST
In a bowl mix flour, salt, and sugar. Add cold butter in pieces and integrate with your hands.
FOR THE CRUMBLE
Pit cherries and add to a bowl. Add sugar, cornstarch, lemon juice & vanilla. Mix. Transfer to the pie crust.
FOR THE FILLING
Top the cherries with 1 cup of crumble mixture. Bake for 40-45 minutes until golden brown.
ASSEMBLE
Let cool on wire rack for around 1 hour. Eat at room temperature with a scoop of vanilla ice cream.
Sweetness: if using sweet cherries I recommend ⅓ cup sugar, and if using tart cherries I recommend ⅔ cup of sugar. Cherries: This recipe works with fresh or frozen cherries. Crumble: You can also use a food processor for the crumble to save time.
