FOR THE CRUST
Wash & hull the strawberries. Add to bowl & cover with sugar. Let macerate at room temperature for 30 minutes. Transfer to colander and let juice drain for about 15 minutes.
FOR THE FILLING
Gather this juice and mix with half the water. Add jello powder and mix until dissolved. Put the other half of water and cornstarch in a medium saucepan, mix until dissolved and put on the stove at medium heat. Add the gelatin mixture, whisking constantly.
Remove and whisk quickly until completely smooth. Put in a bowl of ice water. Whisk as it cools & add the strawberries to the gelatin, mix to coat and pour into the baked pie shell. Cover and refrigerate until completely set.
Beat cold cream and cream cheese in a large bowl, adding powdered sugar. Put in a piping bag and make rosettes on top of the pie. Decorate with a whole or half strawberry.
