Easy Baked Cheesecake
For the crust: mix ground cookies with melted butter until no dry spots remain.
It should look like wet sand and clump when you grab some of it.
Press firmly onto the bottom of round or rectangular pan. Bake for 10 minutes.
The filling: use ingredients at room temperature. Mix cream cheese until very smooth.
Add sugar and integrate well. It will start to dissolve a little.
Add eggs, 2 or 3 at a time and mix well without beating.
Add flavorings and cream. Mix well until you have a smooth batter.
Pour into prepared pan (round or square.) Bake, cool and refrigerate for at least 8 hours.
For the topping: Put berries, sugar & lemon juice in a small saucepan. Cook over low heat for about 5 minutes. Add to cheesecake once refrigerated.
