These quick, incredibly tasty bites can be served with different side dishes. The flavored butter can be made ahead, and it takes 20 minutes to prep and cook the steak pieces.

If you're apprehensive about making whole garlic steaks or want a quick bite or appetizer for game night or a similar occasion, these steak pieces are fantastic!
They're smothered in butter flavored with roasted garlic and herbs, so you know they'll be super flavorful.
A good skillet is highly recommended to get that golden crust and juicy inside. I use a cast iron skillet that gets the steak bites to sizzle wonderfully and brown well. But a sturdy stainless steel one works just fine.
The garlic butter is very customizable when it comes to herbs and seasonings. I like to make it ahead to allow the flavors to meld. But you can use it immediately with great results. So don't put off making this quick dish because of that.
Serving
Steak bites go well with:
- Potatoes: mashed, double-baked or roasted.
- Rice: any type of buttered rice is a good side dish. Or with a drizzle of olive oil.
- Roasted vegetables. Make a sheet pan that includes all or any of the following: potatoes, sweet potatoes, pumpkin wedges or butternut squash, Brussels sprouts, asparagus, broccoli and onions.
Garlic butter process
- Roast the garlic: cut the top of the unpeeled fresh garlic head, leaving it exposed. Drizzle with oil, sprinkle with salt and wrap it in aluminum foil. Bake as directed until soft.
- Mix everything in a bowl until fully integrated. You can use an immersion blender if it's easier; I find it's not worth the trouble for a small amount.
- Spread the butter mixture in a flat circle or rectangle on a piece of parchment paper and fold it to cover it completely before chilling.
- If making a large batch, you might consider using the food processor.
Cook the steak bites
- Sear the meat first in the hot oil so it stays juicy inside, and then top with the garlic butter.
- It will melt and create a wonderful sauce. Sprinkle with the chopped parsley and stir before serving.

Steak Bites with Roasted Garlic Butter

Ingredients
Flavored butter:
- 1 head of garlic
- 1 tablespoon olive oil
- 1 cup unsalted butter, softened
- 1 tablespoon fresh parsley, finely chopped
- 1 teaspoon fresh thyme, finely chopped
- 1 teaspoon fresh rosemary, finely chopped
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 teaspoon lemon juice
Garlic steak bites:
- 1 pound sirloin steak, cut into bite-sized pieces
- 3 tablespoons olive oil
- salt and black pepper, to taste
- 4 tablespoons roasted garlic butter, divided
- 2 tablespoons fresh chopped parsley, to garnish
Instructions
Prepare the garlic butter:
- Preheat your oven to 350°F (180°C).
- Slice the top off 1 head of garlic, exposing the tops of the cloves. Drizzle with 1 tablespoon olive oil and wrap in aluminum foil.
- Roast in the oven for about 30-40 minutes, until the cloves are soft and golden brown. Let cool a little and then squeeze the roasted garlic out of the skins.
- Finely chop 1 tablespoon fresh parsley, 1 teaspoon fresh thyme and 1 teaspoon fresh rosemary.
- Combine 1 cup unsalted butter, softened, the roasted garlic, chopped herbs, ½ teaspoon salt, ¼ teaspoon black pepper and 1 teaspoon lemon juice in a medium bowl. Use a fork or an electric mixer to blend the ingredients until well combined. You can use it immediately or store it in the fridge.
- To make ahead: transfer the garlic butter onto a piece of parchment paper. Shape it into a log and wrap it tightly. Refrigerate for at least 2 hours and up to a week. It will be more flavorful than if you use it right away.
For the steak bites:
- Cut 1 pound sirloin steak into bite size pieces or cubes. Pat dry with paper towels to remove excess moisture. Season with salt and black pepper to taste.
- In a large skillet, heat 3 tablespoons olive oil over medium-high heat until it shimmers.
- Add the steak bites to the skillet in a single layer (do not overcrowd the pan; cook in batches if necessary). Cook for 2-3 minutes on each side until browned but still very red inside.
- Reduce the heat to medium and add 4 tablespoons roasted garlic butter to the skillet. Toss the steak bites to coat them evenly with the butter. Cook for an additional 1-2 minutes until the butter is melted and the steak bites are well-coated but still tender and pink inside.
- Remove the skillet from heat. Sprinkle with 2 tablespoons fresh chopped parsley and serve immediately with the garlic butter sauce that collected in the skillet.
