Today we're sharing a refreshing alternative made with passionfruit. This small wrinkled fruit is not appealing visually but, when opened, has an incredibly fresh lemony scent that is fantastic!

- Tea: choose black tea, green, red, white or any other regular tea with no added flavors. Use teabags or loose tea leaves.
- Passionfruit pulp: use fresh or frozen, with or without seeds.
- White granulated sugar.
- Boiling water.
- Ice cubes and lemon slices to serve.

Variations & substitutions
- Passionfruit green tea: is very popular and one that we make often. Use bags or green tea leaves. It turns somewhat bitter when steeped for too long, so consider that.
- Sweetener: almost any can be used. Brown sugar, muscovado or coconut sugar, honey, agave, stevia and maple syrup.
- Flavored teas: you can use already flavored tea bags. Flavors that go well with passionfruit are citrus (orange, lemon, lime, tangerine), vanilla, hibiscus, mint, elderflower, peach, mango, pineapple, raspberries and strawberry.
- Second fruit: add any of the fruits mentioned above for a mixed-fruit iced tea.
- Minty tea: use fresh mint leaves to infuse the tea together with the passion fruit pulp. Or mint tea bags.

- Color: the skin should be slightly purple or yellow, depending on the variety.

How to make passion fruit tea
- Boiling water: it's essential to bring out the flavors.
- Steeping the tea bags: the time depends on how strong you like it. If you're making it for the first time, and it's too strong, you can water the tea down with more ice or water. Always check for sweetness and adjust.
- Using tea leaves: use a mesh to steep the tea. I like mesh tea balls or tea infusers. The time is similar to using tea bags.
Pour the boiling water and sugar to the pitcher with the tea bags first and stir to dissolve. Then let it steep.
Add the passionfruit pulp white tea is still hot. It'll bring out the flavor.
How long should I steep the passionfruit in the tea?
For a well-infused flavor, steep the passionfruit pulp or juice for around 5-10 minutes. This allows the flavors to meld and the tea to absorb the tropical essence of the passionfruit. Adjust the steeping time based on your taste preferences for a stronger or milder flavor.
Serving iced tea
It should always be served cold.
- Glass pitcher: if guests are serving themselves, use a nice pitcher that is not too heavy. Depending on the number of people, you might need more than one.

Passionfruit Tea (easy iced recipe)
Ingredients
- 4 tea bags, black or green
- 3 cups boiling water
- ⅓ cup sugar
- ½ cup passionfruit pulp
Instructions
- Place the tea bags (or tea leaves in an infuser) in a pitcher, add the boiling water and the sugar, stir and allow to steep for 3-7 minutes. Take into account if you like a stronger or weaker tea flavor.
- Remove the tea bags and add the pulp from the passionfruit to the pitcher.
- Stir to combine and check sweetness and passionfruit flavor. Add more sugar and/or passion fruit juice or pulp if needed and stir well to dissolve.
- Serve in tall glasses over ice with fresh slices of lemon.
