This aioli is a one-step, 10-minute recipe. It's flavor-packed with a spicy kick! I use Sriracha, but other hot sauces also work. We use it as a spread and a dip and for drizzling over meats, veggies, wraps, sandwiches and pretty much everything else we can.
A 1-step homemade condiment
If you've never had aioli before, I'm pretty sure you're about to find a new favorite. If you regularly use it, this spicy variation is a great addition, and I think you should have a jar in the fridge at all times—just in case.
The original Spanish recipe has only two ingredients: garlic and olive oil. But don't roll your eyes yet. This twist with mayonnaise, lime and Sriracha is worth it.
It keeps well for a week or so, and it's a game changer for burgers, fries, salads, wraps and sandwiches. I'm a fan of condiments and sauces in general, and today's recipe will easily make friends with the spicy ketchup and the roasted garlic aioli.
Uses for aioli
- As a dip: it's fantastic with baked potato wedges, fries, carrot and celery sticks and crackers.
- As a spread: for sandwiches, wraps and tacos.
- In salad dressings: thin the aioli with some water or lime juice to make it pourable. Adjust the rest of the seasonings.
- As a sauce: use it over grilled or roasted meats (like carne asada), chicken or fish.

Simply add all of the ingredients into a bowl and stir until completely integrated and uniform in color.
Vintage Kitchen Tip
Don't add all the hot sauce from the start. Stir in ⅔ of the amount specified, check to see if you want it hotter, and adjust. If you overdo it with the spiciness, it's harder to revert.
Kitchen Notes
- Organization: read the recipe first and ensure you have ingredients at the correct temperature, utensils and equipment needed, and enough workspace. This will make the process so much easier.
- Storing: keep it refrigerated for up to a week in a mason jar or glass container with a tight-fitting lid. I don't recommend freezing it.
- Adjust to your palate: this is important with most condiments. Don't be afraid to add more minced garlic, less hot sauce, more salt or honey or whatever you want.
- Substitution for regular mayonnaise: add a vegan alternative or use low-fat mayo. The flavor will be different, and you might need to adjust the seasonings.

Spicy Aioli (garlicky sauce)
Ingredients
- 1 cup mayonnaise
- 2-3 tablespoons sriracha, or to taste
- 1 teaspoon lime juice
- 2 garlic cloves, finely grated or finely minced
- ¼ teaspoon salt
- 1 and ½ teaspoons runny honey, optional for a little sweetness
- Pinch of black pepper, optional
Instructions
- Stir the mayonnaise, Sriracha, lime juice, garlic, and salt (also black pepper and honey if using) in a medium bowl until completely integrated. Taste and adjust to your personal taste.
- Keep refrigerated in a glass jar with a tight lid or an airtight container for 5-7 days.
